For the Bowl:

  • 4 cups frozen tater tots
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Chopped fresh chives (optional, for garnish)

Instructions

Prepare the Sausage Gravy:

  1. Cook the sausage in a large skillet over medium heat until browned and fully cooked. Remove and set aside.
  2. Melt the butter in the same skillet over medium heat. Whisk in the flour until smooth to form a roux.
  3. Gradually whisk in the milk, stirring continuously until the mixture thickens and simmers. Season with salt and pepper to taste.
  4. Add the cooked sausage back to the skillet and stir to combine into a creamy gravy.

Bake the Tater Tots:

  1. Preheat the oven to 425°F (220°C).
  2. Spread the frozen tater tots in a single layer on a baking sheet. Bake for 20–25 minutes or until golden brown and crispy.

Cook the Eggs:

  1. While the tater tots bake, fry the eggs in a separate skillet to your preferred doneness.

Assemble the Bowls:

  1. Divide the crispy tater tots into four serving bowls.
  2. Top each bowl with sausage gravy, a fried egg, and shredded cheddar cheese.
