  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 8 oz pasta (spaghetti, penne, or your choice)
  • Salt and black pepper, to taste
  • Fresh basil leaves, for garnish
  • 1/2 cup reserved pasta water

Instructions

Cook the Pasta:

  1. Bring a large pot of salted water to a boil.
  2. Cook pasta until al dente according to package instructions.
  3. Reserve 1/2 cup of pasta water and drain the rest.

Prepare the Sauce:

  1. Heat chili-infused olive oil in a large skillet over medium heat.
  2. Add minced garlic and red pepper flakes, sautéing until fragrant (about 1-2 minutes).
  3. Stir in cherry tomatoes, cooking until softened and jammy (about 5-7 minutes).
  4. Add balsamic vinegar and let it reduce slightly (1-2 minutes).

Add Cream and Parmesan:

  1. Lower the heat and stir in heavy cream, simmering gently for 2-3 minutes without curdling.
  2. Gradually mix in Parmesan cheese, stirring until the sauce thickens.
  3. Adjust seasoning with salt and black pepper.

Combine with Pasta:

  1. Toss the cooked pasta into the skillet with the sauce.
  2. Gradually add reserved pasta water until the sauce reaches the desired consistency.
  3. Mix well to coat the pasta thoroughly.

Garnish and Serve:

  1. Plate the pasta and garnish with fresh basil leaves.
  2. Optionally, sprinkle extra Parmesan and red pepper flakes for added flavor.
  3. Serve immediately.
