Units Scale
  • 6 large flour tortillas
  • 2 cups shredded cooked chicken (rotisserie works great)
  • 1 tablespoon fajita seasoning
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 onion, chopped
  • 2 cups shredded Mexican blend cheese
  • Olive oil spray or drizzle

Instructions

  1. Preheat Oven: Set your oven to 425°F (220°C) and lightly spray or drizzle olive oil on a large sheet pan.
  2. Season Chicken: Toss the shredded chicken with fajita seasoning in a medium bowl until evenly coated.
  3. Layer the Base: Place three tortillas on the sheet pan, slightly overlapping to cover the base.
  4. Assemble: Evenly spread the seasoned chicken, bell peppers, onion, and cheese across the tortillas.
  5. Top Layer: Cover the filling with the remaining three tortillas, pressing them down gently.
  6. Compact and Bake: Place a second sheet pan on top to press the quesadilla. Bake for 20 minutes.
  7. Final Crisp: Remove the top sheet pan and bake for an additional 5–10 minutes until golden and crispy.
  8. Serve: Let cool slightly, slice into portions, and serve with your favorite dips like salsa, guacamole, or sour cream.
