  • 1 cup coconut milk
  • 2 tbsp Jamaican curry powder
  • 1 tsp thyme (fresh or dried)
  • 1 scotch bonnet pepper (optional, for heat)
  • Salt and black pepper to taste

Optional Garnish:

  • Fresh cilantro or parsley for serving

Instructions

  1. Prepare the Base:
    • Heat olive oil in a large skillet over medium heat.
    • Add the onion, garlic, and bell peppers. Sauté for 2–3 minutes until softened.
  2. Toast the Spices:
    • Sprinkle in Jamaican curry powder and thyme.
    • Stir for 1 minute to release the aroma of the spices.
  3. Make the Sauce:
    • Add the coconut milk and mix well.
    • If using a scotch bonnet pepper, add it to the skillet (whole or chopped for desired heat level).
    • Season with salt and black pepper. Bring to a gentle simmer.
  4. Cook the Shrimp:
    • Add the shrimp to the skillet.
    • Cook for 3–5 minutes, stirring occasionally, until shrimp turn pink and are fully cooked.
  5. Finish and Serve:
