- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup coconut milk
- 2 tbsp Jamaican curry powder
- 1 tsp thyme (fresh or dried)
- 1 scotch bonnet pepper (optional, for heat)
- Salt and black pepper to taste

Instructions
- Prepare the Base:
- Heat olive oil in a large skillet over medium heat.
- Add the onion, garlic, and bell peppers. Sauté for 2–3 minutes until softened.
- Toast the Spices:

- Stir for 1 minute to release the aroma of the spices.
- Make the Sauce:
- Add the coconut milk and mix well.
- If using a scotch bonnet pepper, add it to the skillet (whole or chopped for desired heat level).
