- 2 cups day-old jasmine rice
- 1 tablespoon soy sauce
- 1 teaspoon oyster sauce
- 1 teaspoon garlic, minced
- 1/4 cup peas
- 2 large eggs, scrambled
- 1 tablespoon butter
Vegetables:
- 1 small onion, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 tablespoon soy sauce
Yum Yum Sauce (optional):
- 1/4 cup mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon garlic powder
- 1 teaspoon sugar
- 1 teaspoon rice vinegar
Instructions
- Prepare the Chicken:
- In a small bowl, mix soy sauce, hoisin sauce, garlic, mirin, and honey.
- Heat a wok or large skillet over high heat, add the chicken, and cook until browned and cooked through.
- Add the prepared sauce to the chicken, stirring to coat evenly. Set aside.
- Make the Fried Rice:
- Heat butter in the same wok or skillet over medium heat. Add garlic and cook until fragrant.
- Push garlic to one side, scramble the eggs on the other side of the pan, and combine.
- Add rice, soy sauce, and oyster sauce. Stir until evenly coated and heated through.
