Fried Rice:

  • 2 cups day-old jasmine rice
  • 1 tablespoon soy sauce
  • 1 teaspoon oyster sauce
  • 1 teaspoon garlic, minced
  • 1/4 cup peas
  • 2 large eggs, scrambled
  • 1 tablespoon butter

Vegetables:

  • 1 small onion, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 tablespoon soy sauce

Yum Yum Sauce (optional):

  • 1/4 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon sugar
  • 1 teaspoon rice vinegar

Instructions

  1. Prepare the Chicken:
    • In a small bowl, mix soy sauce, hoisin sauce, garlic, mirin, and honey.
    • Heat a wok or large skillet over high heat, add the chicken, and cook until browned and cooked through.
    • Add the prepared sauce to the chicken, stirring to coat evenly. Set aside.
  2. Make the Fried Rice:
    • Heat butter in the same wok or skillet over medium heat. Add garlic and cook until fragrant.
    • Push garlic to one side, scramble the eggs on the other side of the pan, and combine.
    • Add rice, soy sauce, and oyster sauce. Stir until evenly coated and heated through.
    • Stir in peas and cook for another 2 minutes. Set aside.
  3. Cook the Vegetables:
    • In the same pan, sauté onions, zucchini, and mushrooms over high heat until tender.
    • Add soy sauce and toss to combine.
  4. Prepare the Yum Yum Sauce:
    • Mix all sauce ingredients in a small bowl until smooth. Adjust sweetness or tanginess as desired.
  5. Assemble the Dish:
    • Serve the chicken, fried rice, and vegetables together on a plate.
    • Drizzle with Yum Yum sauce or serve it on the side.
